Where the sensor goes
It mounts in the sump or in an adaptor on the oil filter. The two locations give slightly different readings, so pick one and stay with it, so you can compare from one day to the next.
What you watch
Not the absolute peak, but how quickly it comes down after a hard lap and whether the reading at the same revs climbs from one month to the next. The second case means something has changed in the cooling.
