Engine oil
The second figure in the grade, the one after the W, says how thick the oil stays when hot. On track, where the sump temperature sits well above what you see in town, an oil that is too thin loses its film exactly when you need it. What you choose has to stay within the specification the engine manufacturer asks for, otherwise you swap one problem for another.
Gearbox and differential oil
The gearbox and the differential ask for a different grade from the engine, usually 75W90 or 75W140. If you have a plate type limited slip differential, you need the version with additives for it, marked LS: without it the plates judder in slow corners and you hear them.
Cooling additives
Additives of the MoCool kind drop the coolant temperature a few degrees by improving heat transfer. They help at the margin, they do not replace a radiator that is too small or blocked airflow through the front of the car.
Fuel additives
Octane additives raise the detonation resistance of the fuel in the tank. They make sense as a safety measure when you fill up with fuel of uncertain quality, but they do not replace a map made on the fuel you actually run.
The interval
On track, oil is changed by engine hours, not by kilometres. A trackday weekend is, in terms of load, worth a few thousand kilometres of normal driving.
