Fluid pressure
These are used for oil and for fuel. They are chosen on the measuring range and on the thread, usually 1/8 NPT. A sensor with a range far above the real pressure loses precision exactly in the area you care about.
Air and water temperature
Air sensors mount after the intercooler, so you can see how well it cools. Water ones go in the return line or in the block. The thread and the length of the part that sits in the fluid are on each product page.
Exhaust gas temperature
A type K thermocouple screws into the manifold and shows how hard the engine is working thermally. It is the measurement that catches a lean mixture before it shows up in anything else.
The lambda sensor and the adaptors
A lambda sensor needs a boss in the exhaust. Weld free adaptors, on 51 or 63 mm pipe, let you fit one without a welder, which matters when you take temporary measurements on a dyno.
Compatibility with what you already have
The sensor has to speak the same language as the gauge or the ECU: the same type of signal and the same range. A good sensor connected to a gauge expecting something else shows plausible and wrong numbers, which is worse than not measuring at all.
