Dry and wet boiling point
The high figure on the label is for fresh fluid. Brake fluid absorbs water from the air, and with every percent of water the boiling point falls seriously. That is why an expensive fluid two years old can be worse than a cheap fresh one.
It is changed often
On a track car, the fluid is changed at least once a season, and on some cars before every weekend. An opened bottle does not keep: after a few weeks it has already drawn water.
What mixes and what does not
DOT4 and DOT5.1 are glycol based and can be mixed with each other at a push, although ideally you flush the system. DOT5, silicone based, does not mix with anything above. Check what it says on the reservoir cap first.
