Width matters
A wider brake pedal leaves you room to touch the throttle with the edge of the sole, on a downshift. The distance between brake and throttle is as important as the material.
Fitting
Most sets bolt through the original pedal, so they need drilling. After fitting, check that nothing stops the pedal returning fully and that the bolt does not catch the mat.
