A stud screws into the block and stays there; the head comes down over it and is clamped with a nut. It is tensioned once and does not stretch again at every strip down, so the clamping force stays constant.
A bolt is tightened straight into the block and passes through the head. It is cheaper and lets the head go on without taking the engine out, but it stretches every time it is torqued.
Choose by engine: the code in the title says exactly which application each set covers. If your engine is not on the list, write to us, ARP's catalogue is far larger than what we keep on the shelf.
